Banana bread

This is a moister version than usual with extra fibre. Someone told me about using orange juice. I prefer it to apple sauce. I have also tried a version that includes adding 2 tbsp shredded coconut for a different bite.

½ cup butter, melted
½ cup sugar or ½ cup gula melaka
½ eggs
½ tsp vanilla essence
1½  cup all-purpose flour/whole wheat flour
1 tsp baking soda
½ tsp salt
¼ or ½ cup orange juice
¼ cup milk
¼ cup chopped walnuts
¼ cup wheat germ
2 ripe bananas, chopped or mashed

Preheat oven to 175 C (350 F). Grease a loaf pan.

In a large bowl, stir together melted butter and sugar.
Add eggs and vanilla. Mix well.
Combine flour, baking soda, salt, wheat germ.
Fold in banana, walnuts.
Add milk. Trickle in orange juice while mixing.
Pour into prepared pan.

Bake at 175 C (350 F) for 60 minutes or till a fork comes out clean. Turn onto wire rack to cool.

Update:

Since I started learning my way around the kitchen, the trusty banana bread has undergone several trials. Today, our family relies on a having more bananas to give it a rich, moister texture. It also uses 5-spice powder, an accidental find. Our updated recipe for Easy Banana Walnut Loaf is here and looks like this:
